Wedding treats by no means always had a familiar look. For example, in ancient Rome, a simple bread cake was baked for a wedding celebration, and in Russia a loaf with a large number of decorations was adopted. The wedding cake in our traditional version appeared only at the turn of the 18th and 19th centuries in Europe. It was then that the multi-tiered cake was first created.
Assembly
There are several basic ways to design exquisite wedding cakes in three floors:
- on the stand;
- on the rod;
- like a pyramid.
Most often, confectioners use stands, which are supports that protect the lower floors from the sagging of the upper.
Cakes on a dense stand stand look very stylish and solemn. Most often, milky-white plastic, golden brass or chromed metal are used to make such a support.
The second most popular option is the use of a common support rod. This type of structure requires rounded trays of three diameters and tubes made of metal or plastic. On the lowermost, the cake base is laid out, a small hole is formed in it, into which the core is inserted.
The cake is covered with cream and decorated with flowers, figures, bows and other elements. Then a slightly smaller tray is attached to the tube, and all the manipulations are repeated.
For the assembly of dessert on a core basis, it is better to give preference to light biscuits, which tend to keep their shape well and are simply cut.
If there is no possibility to use a multi-storey stand, then a three-tier cake should be tried to assemble without any supporting skeletons.In this case, it is necessary to prepare cakes of several sizes of arbitrary shape and lay them on top of one another according to the type of pyramid. Cakes in this case occupy 80–90% of the dessert. They must certainly be thick, otherwise the cake will fall apart, without even waiting for the "removal" to the wedding table.
Cakes should be used biscuit, and their impregnation is best done in small portions, otherwise the biscuit may turn out to be simply raw. The cream layer should be approximately 50 mm, and the total number of tiers should not exceed three layers.
If you arrange the sides of each tier so that the protrusions are 10 cm, then you will have to cut such a treat from the very top layer.
Original decor ideas
Three-tiered wedding cake is a real masterpiece of culinary art, which perfectly emphasizes the solemnity of the moment and invariably causes delight of all guests.
In recent years, non-standard approaches to the design of such cakes have become fashionable, and many non-trivial designs have appeared: hanging cakes, asymmetric, inverted or cakes with prints. Such original decors will be discussed further.
Hanging cakes
Not so long ago, an unusual way of serving a cake came into fashion - on a stand that attaches to the ceiling. Visually, such a treat resembles a large chandelier that has descended to the guests. This invariably attracts increased attention and truly decorates the wedding celebration.
Creating such a cake is not easy: you need not only to make the treat itself, but also to work out all the technical and design nuances of fastening. All these works take a lot of time, so such a cake should be ordered in advance.
But it should be noted that the effect exceeds all expectations - such a cake is stunning, delights and remains in memory for a long time.
Inverted
This is a cake for creative people who are alien to the standard canons of wedding events. Adherents of originality will certainly appreciate the so-called inverted dessert. To assemble it, the largest cake is installed on the stand using special hooks, the middle is attached to it from the bottom, and the smallest is attached to the middle. Thus, the effect of a sweet design floating in the air is formed. All pendant elements are covered with mastic and decorated with beads, threads and fresh flowers.
Asymmetric
This is another new and very original way of decorating three-tier cakes. Visually, it resembles a staircase, that is, all its tiers are shifted to one edge. To prepare such a treat, a variety of cakes can be used: biscuit, and sand, and honey. They can be decorated with mastic or a generous layer of cream. Often the design is complemented by fresh flowers, real berries or images of pigeons, swans or other characters.
When assembling such a cake, the upper cake is placed on the lower cake, and both are moved from one side by ledges, by analogy, all subsequent cake layers are laid.
With prints
One of the latest trends in wedding fashion is cakes with drawings. They are carried out, as a rule, on rice paper using edible dyes.
This version of the decor gives great scope for imagination and decoration of the cake. It can be standard floral ornaments, or it can be plots of fairy tales or favorite films of newly made spouses.
A recognized hit of the last season was the placement on the cakes of photos of the newlyweds.
Tips
Each wedding celebration ends with a young cake cutting procedure. Spouses cut small pieces and treat them to their invited guests. The essence of this tradition is that the newlyweds seem to give out their happiness and joy, share them with loved ones and wish them to find the same harmony.
However, cutting multi-story refreshments is not easy at all, and several rules should be followed.
- Three-tier cake must be cut, starting from the lower floor. The very first pieces are served to the bride and groom and their parents.
- Both spouses should cut the wedding cake: the young husband holds a sharp knife, and his beloved wife directs the movements of the hands.
- Before cutting, it is necessary to remove all decorative figures.
- Pieces of the cake should be cut into small portions - about 5-6 cm wide.
The peculiarity of three-tier cakes is that in this treat you can combine several types of fillings and thus please all guests. Most often, creams based on condensed milk, yogurt, chocolate or cream are used for such desserts. There are a lot of options for the combination of impregnations. For example, you can make the first tier with nut cream, the second - from condensed milk, the third - chocolate.
When choosing a filling, you need to be guided not only by your own taste preferences, but also by the general theme of the wedding. For example, if you have an eco-wedding, you should give preference to berry soaks. If you are planning a coffee celebration, then it is better to order a chocolate cake, and for a honey wedding, give preference to a classic honey cake.
The choice of cake largely depends on the features of the wedding event. If you are planning a small party with your family and close friends, then you do not need a three-tier cake, since they all have quite impressive weight. Experienced confectioners argue that in order for the dessert design to be the most stable, the mass of the lower tier should be at least three kilograms, and the total weight of the cake approaches 8–9 kg.
However, if you are determined to surprise your loved ones with such an unusual cake, you can go for a little “trick”: take a special stand, in which instead of the bottom of the treats a foam base is decorated, decorated with mastic and whipped cream.
How to choose?
First, make inquiries about the confectionery in which you plan to order refreshments: go to their website, read reviews on the Internet, and find out the opinions of friends and acquaintances. It is very important to give preference to an experienced craftsman who has the skills to assemble multi-tiered treats and, importantly, uses only the freshest and most natural products for baking a cake.
Decide on the weight and size of the wedding dessert in advance. To get started, count the number of guests and multiply by 1.5: for each guest at a wedding celebration there is a piece of cake weighing about 150 grams. However, if you make a cake based on butter and cream, it will turn out to be quite satisfying, and the weight of the piece can be reduced.
Carefully consider the decor of the cake. Treats with figures depicting the bride and groom are quite popular, although you can always give preference to restrained classics and decorate the cake with flowers and ribbons. In recent years, at the peak of fashion, there are smooth cakes covered with silver-white mastic, and for young people with a sense of humor, you can choose caricature decors.
